Fruity Breakfast Muffins
These little muffins make a great breakfast at home, work or on the go.

Ingredients
- 180g ground almonds
- 2 tsp baking powder
- 50ml olive oil
- 50g fat-free Greek yoghurt
- 4 large eggs
- 1 tsp cinnamon
- 4 tbsp granulated low/calorie-free sweetener
- 1 finely chopped apple
- 100g oats
- 80ml water
Method
- Preheat oven to 180°C/gas 4.
- Whisk together all the muffin ingredients, then pour into a non-stick 12-muffin tin and bake for 15 mins.
- Enjoy your breakfast muffin hot or cold – either way, it tastes great. Serve with 30g calcium-rich, low-fat cottage cheese mixed with 10g pine nuts for an additional 90 kcal, 5g protein, 1g carbs and 7g fat.
