Fruity Breakfast Muffins

These little muffins make a great breakfast at home, work or on the go.

  • Makes: 12 muffins

Nutrition per muffin: 204 kcal, 8g protein, 9g carbs, 15g fat, 1g fibre

Vegetarian, contains nuts, egg, milk and gluten


  • 180g ground almonds
  • 2 tsp baking powder
  • 50ml olive oil
  • 50g fat-free Greek yoghurt
  • 4 large eggs
  • 1 tsp cinnamon
  • 4 tbsp granulated low/calorie-free sweetener
  • 1 finely chopped apple
  • 100g oats
  • 80ml water


  1. Preheat oven to 180°C/gas 4.
  2. Whisk together all the muffin ingredients, then pour into a non-stick 12-muffin tin and bake for 15 mins.
  3. Enjoy your breakfast muffin hot or cold – either way, it tastes great. Serve with 30g calcium-rich, low-fat cottage cheese mixed with 10g pine nuts for an additional 90 kcal, 5g protein, 1g carbs and 7g fat.
