Slow-Cooked Lamb with Apricots

It might be a little bit early for spring lamb, but you can enjoy this quick and easy one-pot dinner any time.

Nutrition per serving: 295 kcal, 25g protein, 26g carbs, 10g fat, 6g fibre



  • 90g lean cubed lamb
  • half an onion, finely chopped
  • 200g canned chopped tomatoes
  • 10g dried chopped apricots
  • ½ tsp cinnamon
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 tsp minced garlic
  • 200ml stock


  1. Combine all the ingredients well in a slow cooker.
  2. Cook on low for at least 8 hours.
